Fat

Fats & Lipids

Fat is an energy-providing macronutrient, present in foods mainly as triglyceride, that supplies fatty acids and supports absorption of certain vitamins.

Lipid describes a broad chemical family including triglycerides, phospholipids and sterols, whose structures and functions differ. In nutrition, fat usually refers mainly to triglycerides. An energy value or storage role belonging to one member cannot automatically be assigned to every lipid, and no single routine measurement describes all members equally.

Ordinary dietary fat is conventionally counted as about 9 kilocalories per gram, so 10 grams provides roughly 90 kilocalories. This planning factor does not apply identically to every lipid molecule, such as cholesterol. Actual portion size, rather than an oil's name or its being natural, determines the energy consumed.

Linoleic and alpha-linolenic acids are essential because humans cannot synthesise their structures from scratch. Essential means that a dietary supply is needed, not that unlimited amounts are beneficial. Different oils, nuts and seeds contribute to this supply. Severely removing all fats can make adequate intake of these fatty acids difficult.

For example, adding olive oil to rice and chicken increases both fat and energy; the amount poured needs to be counted.
